An alternative to the traditional cranberry sauce

Ingredients

  • 1 onion, sliced
  • 1 cup water
  • 3/4 cup dark brown sugar
  • 1/2 cup white sugar
  • 3/4 cup cider vinegar
  • 1/2 tsp each curry, mace, salt
  • 2 tart apples, peeled, seeded, diced
  • 1 tsp fresh ginger
  • Grated rind of 2 oranges (probably just the zest)
  • Juice of 2 oranges
  • 1 qt bag fresh cranberries
  • 1/2 cup currants

Directions

  1. Cook onion in water 30 min in 2 or 3 quart saucepan

  2. Add both sugars, vinegar, spices, apples and orange zest and cook 30 min longer.

  3. Add cranberries,currants and OJ and boil slowly 10 min or until berries have burst.

  4. Cool and serve, or freeze. Makes 1 quart
