California Dreamin Cause Im Tired Of Winter Vegan Award Winning Chili 12-Dec-2013

This chili won my brother first prize for veggie chili in a department chili cookoff. (He was the only entrant, but they could have withheld the award if the chili was no good.)

Ingredients

  • 1/3 cup olive oil
  • 2 medium onions - peeled and chopped
  • 4 cloves crushed garlic
  • 2 jalapeño peppers – seeded and chopped
  • 1 mild pepper (poblano) – seeded and chopped
  • 1 green bell pepper – seeded and chopped
  • 1 red bell pepper – seeded and chopped
  • 2 large tomatoes – diced
  • 8 ounces tomato sauce
  • 2 (15 ounce) cans spicy tomatoes and chilies
  • 2 (15 ounce) cans dark red kidney beans
  • 1 (15 ounce) can garbanzo beans
  • 3 cups water
  • 4 tablespoons chili powder
  • 2 tablespoons ground cumin
  • 1 tablespoon paprika
  • 1 tablespoon oregano
  • 1 tablespoon lemon juice
  • salt and pepper to taste
  • Tabasco on the side

Directions

  1. Brown onions and garlic until translucent

  2. Assemble everything in a crock pot

  3. Cook on low for 7-8 hours
