roasting squash and tomatoes together makes a really wonderful flavour


  • 1 small acorn squash, peeled, seeded, and thinly sliced
  • 2 medium tomatoes, wedged
  • 1 small red onion, thinly sliced
  • 2 crushed garlic cloves
  • 1 sprig rosemary
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • salt and pepper


  1. Toss the sliced squash and quartered tomatoes with the other ingredients

  2. Lay ingredients in a single layer on a baking sheet/pan

  3. Roast at 425&degF;, stirring once, until tender, about 40 minutes.

  4. Toss with grated parmesan to serve.
