roasting squash and tomatoes together makes a really wonderful flavour
Ingredients
- 1 small acorn squash, peeled, seeded, and thinly sliced
- 2 medium tomatoes, wedged
- 1 small red onion, thinly sliced
- 2 crushed garlic cloves
- 1 sprig rosemary
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- salt and pepper
Directions

Toss the sliced squash and quartered tomatoes with the other ingredients

Lay ingredients in a single layer on a baking sheet/pan

Roast at 425°F;, stirring once, until tender, about 40 minutes.

Toss with grated parmesan to serve.
